Virtual Lunch Club – Tuesday 25 January

Join us via Zoom for V for Life's next virtual lunch club, Tuesday 25 January at 1pm. We'll be creating a Mexican feast of guacamole and chilli, accompanied by sweet potatoes.

No need to cook all the dishes, just pick your favourite. The simplest, quickest dish will be the avocado dip which can be enjoyed with tortilla chips.

Check out the recipes below, buy your ingredients, and cook the dishes on the day ready for the lunch club at 1pm.

Avocado Dip

Chilli Non Carne

Baked Sweet Potatoes with Avocado Salsa 

You'll need to buy or find the following ingredients in your cupboards:

Avocado Dip

  • 1 medium, ripe avocado
  • ½ tbsp tahini (sesame seed paste)
  • 2 tsp olive oil
  • 2 tsp lemon juice
  • 1 small garlic clove, crushed
  • Black pepper
  • Paprika


  • 1 tbsp olive oil (for the pasta dishes, or sunflower oil for the rice ones)
  • ½ large onion, chopped
  • 1½ cloves of garlic, crushed
  • ¼ red pepper, chopped
  • ½ medium courgette, chopped in half lengthways then sliced
  • 50g (2oz) mushrooms, chopped
  • 110g (4oz) veggie mince
  • 400g tin of chopped tomatoes
  • ½ tbsp tomato purée
  • ½ tsp chilli powder
  • ½ tsp paprika
  • ½ tsp cumin
  • ½ tbsp peanut butter
  • 50g (2oz) sweetcorn
  • 50g (2oz) kidney beans, cooked, rinsed and drained

Sweet Potato Dish

For the salsa

  • 1 ripe avocado, peeled and cut into rough cubes
  • ½ large white onion, diced roughly
  • 1 small red pepper, cut into rough cubes
  • 2 corn on the cob (steamed and then corn removed from cob) – or use tinned sweetcorn
  • Fresh thyme
  • 1 tsp curry powder
  • Cracked black pepper
  • Sea salt
  • Extra virgin olive oil
  • 1–2 tsp lemon juice

For the potatoes

  • 2 large sweet potatoes
  • Olive oil
  • Paprika and/or chilli powder
  • Salt and pepper
  • Grated chive cheddar. Try a vegan cheese – there are lots listed at www.vegancheese.co.uk, and you can buy online or in health food shops.

If you'll struggle to cook on the day, feel free to join with a cup of tea or whatever you're having for lunch that day.

Open to vegetarians, vegans and meat reducers aged 65 and over.
