Serves: 12 biscuits
Time to prepare: 35 mins
Time to cook: 15 mins
Dietary requirements: Dairy-free, Vegan

Ingredients

Biscuits

  • 200g/7oz dairy free margarine
  • 100g/3½oz caster sugar
  • 1 tsp vanilla essence
  • 300g/10½oz plain flour
  • 1 tsp ginger powder
  • 2 tsp lemon or orange zest
  • 1 tsp mixed spice
  • To decorate your biscuits – a pre-mixed icing tube

Chocolate Pots

  • 75g/2½oz dark vegan chocolate, melted
  • 300g/10½oz silken tofu
  • 1 tbsp cocoa powder
  • 1 tbsp maple syrup
  • ½ a small banana

Instructions

Biscuits

  1. Cream the sugar and margarine together and add the flavour of your choice.
  2. Fold in the flour and bring together as a dough, but don’t overwork.
  3. Wrap and place into the fridge for at least 30 minutes.
  4. When the dough has chilled, carefully roll out your dough on a lightly floured surface and cut out your biscuits to the shape of your choice. Bake on a lined tray, in a preheated oven 180°C/350°F/gas mark 4 for 12–15 minutes.
  5. When the biscuits are fully cooled, use a tube of ready-made icing to create patterns and words. A decorated biscuit with an individual message can bring a little joy to the day.

Chocolate Pots

Blend all the ingredients together. Divide between 4 small glasses or pots and serve with the individually iced biscuits. Can be chilled before serving. Enjoy!
