Smashed Avocado

  • 1 ripe avocado
  • Juice of ½ lime
  • 1 tomato, finely chopped with centre removed
  • Pinch chilli flakes
  • Good lug of olive oil
  • Handful coriander, roughly chopped
  • A pinch of salt


  1. Mash the avocado, lime, tomato, chilli and olive oil together with a fork.
  2. Stir in the coriander and season to taste.
