Virtual Lunch Club – Tuesday 24 May

Join us via Zoom, for V for Life's next virtual lunch club, Tuesday 24 May at 1pm. We'll be preparing a tasty afternoon tea in anticipation of the Queen's Jubilee.

Check out the recipes below, buy your ingredients and cook the dishes on the day, ready for the lunch club at 1pm.

Sandwich Platter

Perfect Victoria Sponge

Fruit Scones


You'll need to buy or find the following ingredients in your cupboards:

For the sandwiches:

Please choose your preferred choice of sandwich and get the necessary ingredients.

For the Victoria Sponge:

  • 400g/13oz self-raising flour
  • 1¼ tsp bicarbonate of soda
  • 200g/7oz caster sugar
  • 115ml/3¾oz sunflower oil
  • 400ml/14fl oz dairy-free milk, such as oat or unsweetened soya
  • 1 tbsp golden syrup
  • 1 tsp vanilla extract
  • 4 tbsp strawberry jam
  • 150g/5oz strawberries, halved or quartered depending on size, to decorate

For the vegan buttercream:

  • 200g/7oz dairy-free spread, plus extra for greasing
  • 175g/6oz icing sugar, sifted
  • 1 tsp lemon juice

For the scones:

  • 225g/scant 8oz self-raising flour
  • Pinch of salt
  • 50g/1¾oz vegan margarine or butter
  • 50g/1¾oz raisins
  • 25g/generous ¾oz caster sugar
  • 120ml plant milk
  • Jam, vegan butter and vegan cream

As always, no need to cook all the recipes, just pick your favourite. Or if you'll struggle to cook on the day, feel free to join with a cup of tea or whatever you're having for lunch that day.

Open to vegetarians, vegans and meat reducers aged 65 and over.
