Virtual Lunch Club – Tuesday 22 June

Join us via Zoom, for V for Life's next virtual lunch club on Tuesday 22 June with a picnic in your garden. (Or an indoor picnic if the weather isn't on our side!)

Check out the recipes below, buy your ingredients, and cook the dishes on the day ready for the Zoom chat at 1pm.


Coronation Chicken Pastries

Quick Walnut Pâté

Panzanella


You'll need to buy or find the following ingredients in your cupboards:

Coronation 'Chicken' Pastries:

  • 280g packet vegan Quorn chicken pieces
  • 1 packet ready-rolled puff pastry (e.g. Jus-Rol)
  • 1 tbsp dairy-free milk
  • 1 tbsp vegetable oil
  • 75g dairy-free mayonnaise
  • 1 heaped tsp mango chutney
  • 15g sultanas
  • 1 level tsp curry powder
  • 1 level tsp turmeric
  • Pinch of salt
  • 1 small tomato, chopped into small pieces
  • Fresh coriander, chopped

Walnut Pâté:

  • 125g walnuts, roughly chopped
  • 125g fresh brown breadcrumbs
  • 1 small red onion, roughly chopped
  • 1 tbsp fresh chopped tarragon
  • 1 tbsp fresh chopped chives
  • Salt and freshly ground black pepper
  • 1 tsp tomato purée
  • 1 tsp soya sauce
  • 2 tsp walnut oil

Optional:

  • 1 tbsp vegan red wine

Panzanella:

  • 300g ripe mixed tomatoes
  • 100g stale bread
  • Pinch garlic powder
  • 1 small red onion
  • 2 tbsp capers
  • A bunch of fresh basil
  • A good lug of olive oil
  • 2 tbsp of red wine vinegar
  • Good pinch of sea salt
  • Freshly ground black pepper

As always, there is no need to cook all of the recipes. You can choose just one or two, or simply join the lunch club with a cup of tea or what you're having for your lunch that day.
