Virtual Lunch Club – Tuesday 26 July

Join us via Zoom, for V for Life's next virtual lunch club, Tuesday 26 July at 1pm. We'll be making some tasty British classics: vegan 'fish' and chips and sticky toffee pudding.

Check out the recipes below, buy your ingredients and cook the dishes on the day ready for the lunch club at 1pm.

Vegan 'Fish' and Chips

Sticky Toffee Pudding


You'll need to buy or find the following ingredients in your cupboards:

'Fish' and chips:

  • 100g/3½oz cornflour
  • 100g/3½oz plain flour
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 175ml/6fl oz chilled water, sparkling water, or ginger beer
  • 250g/9oz banana blossom OR 300g/10½oz firm smoked tofu, drained and sliced into portions
  • 1 sheet nori
  • Vegetable oil for frying

Sticky toffee pudding:

  • 200ml soya milk
  • 200g/7oz pitted dates, chopped
  • 1 tbsp black treacle
  • 1 tsp vanilla essence
  • 100g/3½oz vegan margarine
  • 80g/generous 2¾oz soft brown sugar
  • 100g/3½oz walnuts, finely chopped
  • 200g/7oz self-raising flour
  • 1 tsp baking powder

For the toffee sauce

  • 50g/1¾oz soft brown sugar
  • 100g/3½oz light brown sugar
  • 50g/1¾oz soya milk
  • 1 tsp vanilla essence
  • Small pinch of salt

If you'll struggle to cook on the day, feel free to join with a cup of tea or whatever you're having for lunch that day.

Open to vegetarians, vegans and meat reducers aged 65 and over.
