Virtual Lunch Club – Tuesday 23 August

Join us via Zoom, for V for Life's next virtual lunch club, Tuesday 23 August at 1pm. We'll be making some tasty cheap and cheerful dishes including a bean dip, spaghetti bolognese and banana fool, perfect if you're looking for some budget tips.

Check out the recipes below, buy your ingredients and cook the dishes on the day ready for the lunch club at 1pm.

Borlotti Bean and Dill Pâté

Spaghetti Bolognese

Banana Fool


You'll need to buy or find the following ingredients in your cupboards:


For the borlotti bean and dill pâté:

  • 400g/14oz tin borlotti beans, drained and rinsed
  • ¼ small garlic clove (really small)
  • 50g/1¾oz vegan cream cheese
  • 1 tbsp lemon juice
  • 1g fresh dill (two little sprigs)
  • Salt and pepper

 

For the spaghetti bolognese:

  • 1 tbsp olive oil 
  • ½ large onion, chopped
  • 1½ cloves of garlic, crushed
  • ¼ red pepper, chopped
  • ½ medium courgette, chopped in half lengthways then sliced
  • 50g/2oz mushrooms, chopped
  • 110g/4oz veggie mince
  • 400g tin of chopped tomatoes
  • ½ tbsp tomato purée
  • 1 bay leaf
  • 1½ tsp basil
  • 1 tsp oregano

 

For the banana fool:

  • 1 pack silken tofu, any type (about 350g/12oz package)
  • 1 large ripe banana, mashed
  • 4 tbsp maple, agave or date syrup
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract

 

Talk cookery, recipes and more, and meet likeminded people from across the UK.

If you'll struggle to cook on the day, feel free to join with a cup of tea or whatever you're having for lunch that day. Or just pick one of the recipes and prepare that.

Open to vegetarians, vegans and meat reducers aged 65 and over.
