Virtual Lunch Club – Tuesday 26 April

Join us via Zoom, for V for Life's next virtual lunch club, Tuesday 26 April at 1pm. We'll be creating a tasty Easter feast of nut loaf and carrot cake.

Check out the recipes below, buy your ingredients and cook the dishes on the day ready for the lunch club at 1pm.


Vegan Nut Loaf

Vegan Carrot Cake


You'll need to buy or find the following ingredients in your cupboards:

For the nut loaf:

  • 2 cups of cooked brown lentils
  • 2 tbsp vegetable oil
  • 1 red onion, diced
  • 3 heaped cups of thinly sliced shiitake or mixed mushrooms
  • 5 tbsp vegan Worcestershire sauce
  • 2 cups of sliced and peeled sweet potato
  • 2 cups walnuts and sunflower seeds
  • 4 tbsp tomato paste
  • 5 sprigs of fresh thyme
  • 1/2 cup of stuffing mix (or breadcrumbs)
  • salt
  • pepper
  • tomato sauce (optional)

For the carrot cake:

  • Egg replacement (4 eggs' worth)
  • 300g/11oz grated carrots (5–6 medium carrots)
  • 200ml vegetable oil
  • 300g/11oz lightly packed brown sugar
  • 150g/5oz plain flour
  • 100g/4oz wholemeal flour
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • ½ tsp cloves
  • 1 tsp ground ginger
  • 1 tsp all spice
  • 1½ tsp ground cinnamon
  • 100g/4oz coarsely chopped walnuts (optional)
  • For the icing (optional)
  • 340g/12oz vegan cream cheese
  • Zest of 1 orange
  • 1 tsp vanilla bean paste
  • Icing sugar to taste

Open to vegetarians, vegans and meat reducers aged 65 and over.
