Ingredients
- 225g/8oz wholemeal self-raising flour
- 110g/4oz vegan margarine
- 1 tsp cinnamon
- 110g/4oz brown sugar
- 1 tsp mixed spice
- 275g/10oz apples – peeled, cored and finely chopped
- 75g/3oz chopped dates and raisins (or sultanas)
- 1 egg – beaten*
- Grated rind and juice of 1 lemon
Instructions
- Grease an oblong tin (approx 18 x 25 cm/7 x 10 in) or line with greaseproof paper.
- Sift flour and spices into mixing bowl.
- Add sugar and finger-mix to remove any lumps.
- Rub in margarine until resembles fine crumbs.
- Add apples, dried fruit and lemon rind and juice and mix in with beaten egg.
- Spread evenly in tin and bake at 190°C/375°F/gas mark 5 for 45 minutes.
- Allow to cool in tin and then cut into squares.
- Serve hot or cold with cream*, yoghurt* or crème fraiche*.
