Raw Coconut Curry

Serves: 3–4
Time to prepare: 10 mins
Dietary requirements: Dairy-free, Egg-free, Halal, Kosher, Vegan

Ingredients

  • 2 large courgettes
  • 1 large carrot, peeled
  • 1 tin coconut milk
  • 1 large clove garlic, peeled
  • 1/2 inch piece fresh ginger
  • 1 tsp mild curry powder
  • 1 tsp ground cumin
  • Juice of 1 lime
  • 1/2 tsp soy sauce/tamari
  • Small bunch fresh coriander (keep a small amount for sprinkling on top)

For garnish

  • Crushed peanuts (optional)
  • 1 small red chilli, thinly sliced (optional)

Instructions

  1. In a large bowl, spiralise or grate the courgette and carrot. Put to one side.
     
  2. Place all other items in a high speed blender and blitz until smooth. Pour over spiralised vegetables.
     
  3. Top items with crushed peanuts, freshly chopped chilli and coriander (optional).
     

No cooking required.
