Ingredients
- ½ onion – finely sliced
- 1 small boiled potato – diced
- 1 large tomato – skinned and chopped
- ¼ red pepper – diced
- 2 tsp olive oil
- 2 eggs
- 1 tsp water
- ½ tsp dried mixed herbs
Instructions
- Gently fry onion and potato in small omelette pan, with frequent turning, until golden brown.
- Add tomato and pepper and fry for further 2/3 mins.
- Lightly beat eggs with water and herbs and season.
- Pour over vegetables in omelette pan and cook gently until omelette has firmed on bottom.
- Brown under grill for 1/2 minutes until top just set and slide unfolded onto plate.
