Jackfruit is a good vegan meat replacement for texture and with the flavours used in this dish you have a tasty vegan version of a Mexican classic.

Ingredients
- • 3 tbsp lime juice
- • 1 clove garlic, crushed and finely chopped
- • 1 tsp cumin powder
- • 1 tsp chilli powder
- • 1 tsp dried oregano
- • Salt and black pepper to taste
- • 1 can jackfruit, drained
- • 1 tbsp olive oil
- • 1 shallot (or small onion), finely chopped
- • 8 tortilla wraps
- • Vegan cheese, grated
- • Chopped avocado to serve (optional)
Instructions
- Prepare a marinade by mixing lime juice, chopped garlic, cumin, chilli, oregano, salt and black pepper.
- Add the jackfruit and mix well. Set aside.
- In a frying pan, warm up the olive oil then add the chopped onion and a pinch of salt. Sauté the onion till it starts to lightly caramelise.
- Add the marinated jackfruit.
- Sauté until you notice some caramelisation happening on the bottom of the pan.
- Add extra seasoning if required
- Serve on tortilla wraps topped with vegan cheese and/or avocado.
