Lentil Burgers

Dietary requirements: Dairy-free, Egg-free, Vegan

Ingredients

  • 500g/18oz cooked lentils
  • 100g/4oz cooked millet
  • 100g/4oz sultanas
  • 50g/2oz wholemeal flour
  • 1 onion – chopped finely
  • 2 tbsp sunflower seeds
  • 1 tbsp yeast extract
  • 1 tsp dried basil
  • Soya milk

Instructions

  1. Combine all ingredients, except milk, and mix well.
  2. Add enough soya milk until mixture binds.
  3. Form into balls and then flatten to burger shape.
  4. Shallow fry in vegetable oil.
