            Ingredients
            
            
            
              
                - 225g/8oz mushrooms, peeled
 
              
                - 2 tbsp milk
 
              
                - 6 free-range eggs or egg replacements (optional)
 
              
                - 3 skinned tomatoes, sliced
 
              
                - 75g/3oz cheddar cheese, grated
 
              
                - 2 tbsp chopped parsley
 
              
            
            
            
            
            
            
            
            
            
            
           
          
          
            Instructions
            
              - Arrange mushrooms upside down in frying pan and pour in milk.
 - Heat gently until just starting to boil. Remove from heat.
 - Transfer mushrooms to greased ovenproof dish and reserve liquid.
 - Beat eggs with milk from mushrooms, adding parsley and seasoning.
 - Scramble lightly and spoon over mushrooms, topping with tomato slices.
 - Cover with grated cheese and brown under hot grill.
