            Ingredients
            
            
            
              
                - Good lug of olive oil
 
              
                - 1 onion, finely chopped
 
              
                - 2 garlic cloves, finely chopped
 
              
                - 1 tsp mixed herbs
 
              
                - 1 tsp cumin
 
              
                - 1 tsp smoked paprika
 
              
                - 1 tbsp tamari or soy sauce
 
              
                - 1 tbsp apple cider vinegar
 
              
                - 1 x 400g tin tomatoes
 
              
                - 1 tbsp maple syrup
 
              
                - 1 x 400g tin borlotti or cannellini beans
 
              
                - 1 tbsp tomato purée
 
              
            
            
            
            
            
            
            
            
            
            
           
          
          
            Instructions
            
              - Heat a pan over a medium heat.
 - Add olive oil and fry the onions until translucent.
 - Add the garlic and fry for a further minute.
 - Add the herbs and spices, then add the tamari, apple cider vinegar, tomatoes, maple syrup, beans and tomato purée.
 - Bring to the boil then let simmer for 15–20 minutes until it thickens.
