Cheese & Parsnip Roast

Time to cook: 30 mins
Dietary requirements: Gluten-free, Halal, Kosher, Vegan (with substitutions), Wheat-free

Ingredients

  • 750g / 1.5 lb parsnips
  • 110g / 4oz cheese (or vegan cheese optional)
  • 1 egg (optional) or egg replacement (optional)
  • 40g / 1.5oz margarine
  • 1 tsp of mixed herbs

Instructions

  1. Cook parsnips in boiling water for approx 10 minutes (or steam or microwave).
  2. Mash with margarine, egg, cheese and herbs.
  3. Place in greased dish and bake for approx 30 minutes at 150°C / 300ºF / Gas Mark 2 until brown
