            Ingredients
            
            
            
              
                - 2 large courgettes
 
              
                - 1 large carrot, peeled
 
              
                - 1 tin coconut milk
 
              
                - 1 large clove garlic, peeled
 
              
                - 1/2 inch piece fresh ginger
 
              
                - 1 tsp mild curry powder
 
              
                - 1 tsp ground cumin
 
              
                - Juice of 1 lime
 
              
                - 1/2 tsp soy sauce/tamari
 
              
                - Small bunch fresh coriander (keep a small amount for sprinkling on top)
 
              
            
            
            
              For garnish
            
            
              
                - Crushed peanuts (optional)
 
              
                - 1 small red chilli, thinly sliced (optional)
 
              
            
            
            
            
            
            
            
           
          
          
            Instructions
            
              - In a large bowl, spiralise or grate the courgette and carrot. Put to one side.
 - Place all other items in a high speed blender and blitz until smooth. Pour over spiralised vegetables.
 - Top items with crushed peanuts, freshly chopped chilli and coriander (optional).
