Vegetable Quiche

Dietary requirements: Halal, Kosher, Vegan (with substitutions)

Ingredients

  • 110g/4oz wholewheat flour
  • 50g/2oz vegetable fat
  • 2 eggs or egg replacements (optional)
  • 570ml /1 pint milk
  • 110g/4oz grated cheese
  • 2 tbsp cold water
  • Selection of vegetables (e.g. cooked sliced courgette or carrots, sliced peppers, tinned chick peas, or beans)
  • 1 tomato

Instructions

  1. Sift the flour into a bowl with a pinch of salt.
  2. Add the fat and mix with fingers until mixture looks like breadcrumbs.
  3. Mix to a dough with cold water and refrigerate for 1 hour to chill.
  4. Line a shallow dish with the pastry and prick base with a fork.
  5. Beat the eggs into the milk, season and pour into the flan case.
  6. Add the vegetables and sprinkle grated cheese evenly over the top.
  7. Bake in oven at 190°C/375°F/gas mark 5 for 30–40 minutes. Add sliced tomato 5 minutes before removing from oven.
