This is a hearty family style recipe full of tasty and healthy ingredients. Mustard adds a real richness and depth of flavour and the apple adds a lovely sweetness. Easy to make and satisfying.

Ingredients
8 plant-based (vegan) sausages
1 tbsp vegetable oil
1 onion, chopped
2 garlic cloves, finely chopped
2 carrots, sliced (250g)
8 small potatoes, cubed (350g)
1 apple, peeled, cored and cubed
400g tin chopped tomatoes
500ml/17½fl oz vegetable stock
2 tsp English mustard
1 tbsp Henderson’s Relish*
1 tsp mixed herbs
Salt and pepper
Instructions
Cut the sausages into chunks and gently fry. When cooked, set to one side.
While the sausages are cooking in a separate saucepan gently fry the onions for 5 minutes, then add the garlic and cook for another 2 minutes.
Add the all of the remaining ingredients excluding the sausages and gently simmer for 20 minutes.
Add the cooked sausages and simmer for another 5 minutes. Season as needed.
Serving suggestion: This really is a one-pot dish but does work with nice crusty bread to dip into the sauce.
* Chef’s tip Henderson’s Relish is a vegan Worcestershire style. Many other brands contain anchovies.
