Flapjacks

This traditional biscuit needs no introduction. Many versions exist, but the basic recipe is oats, fat and sugar. This recipe contains chopped dried apricots.

Serves: 15 slices
Time to prepare: 05 mins
Time to cook: 25 mins
Dietary requirements: Dairy-free, Egg-free, Vegan

Ingredients

  • 225g/8oz oats
  • 125g/4½oz vegan margarine
  • 125g/4½oz light brown sugar
  • 3 tbsp golden syrup or caramel sauce
  • 50g/1¾ oz dried apricots, chopped
  • Very small pinch salt

Instructions

  1. Preheat the oven to 180°C/gas mark 4.
  2. Line a baking tray approximately 20 x 20 cm (8 inch) with greaseproof paper.
  3. Gently melt the margarine, sugar and golden syrup.
  4. Add the apricots, oats and salt, then mix well.
  5. Press your mixture evenly into the baking tray and bake for 20 minutes.
  6. Allow to cool slightly before partially slicing (still in the tray).
  7. Allow to cool completely before slicing fully and serving.

Cook’s tip: This really is the basic recipe. Add chopped nuts, dried fruit, seeds, peanut butter, spices, desiccated coconut etc. Why not top your flapjack with melted chocolate for a real treat?
