Virtual Lunch Club – Tuesday 27 September

Join us via Zoom, for V for Life's next virtual lunch club, Tuesday 27 September at 1pm. We'll be showing you what to do with your tasty, home-grown fruit and veggies.

Check out the recipes below, buy your ingredients and cook the dishes on the day ready for the lunch club at 1pm.

Spicy Courgette and Pea Fritters

Orange, Beet, Dill

Apple Cake


 

For the fritters:

2 medium courgettes, grated

100g plain flour (gluten) (*or gram flour)

1 small onion, finely chopped

50g frozen peas, defrosted

2 cloves of garlic, finely chopped

Salt to taste

1 green chilli, chopped

Handful coriander, chopped

1 tsp chilli powder

1 tsp garam masala

1 tsp cumin seeds

Oil for cooking

1 tsp baking powder

 

For the salad:

4 cooked and peeled beetroots

3 oranges

Small bunch fresh dill, chopped

4 tbsp olive oil

3 tbsp apple cider vinegar

Juice of ½ lemon

1 tsp Dijon mustard

1 tsp maple syrup (optional)

 

For the apple cake:

225g/8oz wholemeal self-raising flour

110g/4oz vegan margarine*

1 tsp cinnamon

110g/4oz brown sugar

1 tsp mixed spice

275g/10oz apples – peeled, cored and finely chopped

75g/3oz chopped dates and raisins (or sultanas)

1 egg – beaten* (can be omitted)

Grated rind and juice of 1 lemon

*Please note the vegan variations for this recipe.

If you'll struggle to cook on the day, feel free to join with a cup of tea or whatever you're having for lunch that day. Or just pick one of the quicker recipes and prepare that.

Open to vegetarians, vegans and meat reducers aged 65 and over.
