    The humble baked potato is a cheap, tasty and potentially nutritious meal. The number of fillings is almost endless. Beans and cheese are the obvious choice, but here are a few you may not have tried.

  • Slow-roasted Vegetables and Couscous

    This simple one-tray Mediterranean style dish is great hot or cold. Feel free to add other ingredients you may have in such as courgette, or butternut squash. 
  • Veggie Mince and Onions

    Serves: 2-3

    Time to cook: 30 mins
    Dietary requirements: Dairy-free, Egg-free, Gluten-free, Vegan, Wheat-free
    As a child I would have this with chips and peas. Very comforting. This recipe makes a great base for cottage pie. Feel free to add extra vegetables like peppers, courgettes or mushrooms. 
  • Veggie Pineapple ‘Chicken’

    This dish was very popular in the 1970s, along with flared trousers and the Bee Gees.
