Virtual Lunch Club – Tuesday 22 March

Join us via Zoom, for V for Life's next virtual lunch club, Tuesday 22 March at 1pm. We'll be making a tasty Moroccan Medley of root vegetable tagine and a couscous salad.

Check out the recipes below, buy your ingredients and cook the dishes on the day ready for the lunch club at 1pm.

Root Vegetable Tagine

Couscous Salad

You'll need to buy or find the following ingredients in your cupboards:

Root Vegetable Tagine

  • 1 medium onion, quartered
  • 2 garlic cloves, crushed
  • 2 large carrots, peeled and cut into large chunks
  • 2 large parsnips, peeled and cut into large chunks
  • ½ medium butternut squash, seeds removed, peeled and cut into large chunks
  • 500ml vegetable stock (*or gluten-free vegetable stock)
  • 1 tbsp tomato purée
  • 1 medium cinnamon stick or 1 tsp ground cinnamon
  • 1 tsp freshly grated ginger or ½ tsp ground ginger
  • 1 tsp ground cumin
  • 1 tin chopped tomatoes
  • 5 dried apricots, quartered
  • 400g tin chickpeas
  • 2 tbsp freshly chopped coriander for garnish (optional)
  • 2 tbsp flaked almonds for garnish (optional)

Couscous Salad

  • 60g/2oz couscous
  • 1 spring onion – chopped
  • ¼ red pepper – chopped
  • ½ small tin of sweetcorn (or chickpeas or beans)
  • 1 tbsp olive oil
  • 1 small tomato, chopped
  • 85ml/generous 5½ tbsp water
  • Chopped parsley, brown sugar, lemon juice and soy sauce

If you'll struggle to cook on the day, feel free to join with a cup of tea or whatever you're having for lunch that day.

Open to vegetarians, vegans and meat reducers aged 65 and over.
