Virtual Lunch Club – Tuesday 28 June

Join us via Zoom, for V for Life's next virtual lunch club, Tuesday 28 June at 1pm. We'll be bringing you a taste of Italy with a mushroom linguine and a quick and easy Tiramisu.

Check out the recipes below, buy your ingredients and cook the dishes on the day ready for the lunch club at 1pm.

Mushroom Linguine Carbonara

Vegan Tiramisu


You'll need to buy or find the following ingredients in your cupboards:

Carbonara:

  • 100g Quorn ham slices
  • 100g mushrooms, sliced
  • 2 tbsp olive oil
  • 2 shallots, finely chopped
  • 2 cloves garlic, crushed
  • 2 tbsp plain flour
  • 400ml soy milk
  • Salt and pepper
  • 5g flat leaf parsley, chopped
  • 300g linguine
  • Extra flat leaf parsley to garnish

Tiramisu:

  • 3 vegan biscuits (digestive or rich tea)
  • 1 tbsp cocoa powder

For the coffee:

  • 80ml of strong coffee
  • 1 tsp sugar
  • (optional) coffee liquor
  • vegan cream
  • 150g silken tofu
  • 1 tbsp sugar
  • 2 drops of vanilla essence
  • 1 tsp lemon juice

As always no need to cook all the recipes, just pick your favourite. Or if you'll struggle to cook on the day, feel free to join with a cup of tea or whatever you're having for lunch that day.

Open to vegetarians, vegans and meat reducers aged 65 and over.
