Ollie's creation is a firm favourite in my house. This lively sauce combines zesty lemon, briny green olives and capers, Dijon mustard and fresh parsley for a bright, tangy punch. Finished with a scattering of toasted flaked almonds for crunch and optional micro-herbs or edible flowers for colour, it’s a refreshing dairy-free and vegan starter that perfectly balances light textures and bold Mediterranean flavours.

Developed by Roving Chef Alex, this is a light and airy lemon sponge infused with vibrant citrus notes and layered with silky smooth lemon curd at its heart. It is served alongside a creamy banana, chocolate and peanut butter ice cream that delivers the perfect balance of sweetness and richness. Finished with shards of golden nut brittle for a satisfying crunch and drizzled with a bright fruit coulis to add a refreshing, tangy flourish. A beautifully balanced dessert that is zesty, indulgent and irresistibly moreish.
